WHere is an easy version of a beverage featured on our latest menu. Designed as a batch pre-mixed which is loaded with flavours associated with Christmas time, which makes it ideal for a festive gathering. Any leftover syrup you can use for brunch beverages, sweets, or to make another batch of bikinis.
Bikini Recipe
Yields 10 servings
For the Clementine Cordial (yields 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
For the Premix (produces 850ml, to serve 10)
400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml clementine cordial (see above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing
Instructions
To prepare the Cordial: Combine all the items inside a saucepan, bring to a simmer, mixing to dissolve. Then, remove from the burner allowing it to reach room temperature completely. Decant into a clean bottle, close it and refrigerate it chilled, where it will keep for up to a month.
Preparing the Batch Mix: Pour all the spirits and syrup in a sizeable container, leave to sit for 60 minutes, then strain preferably using cheesecloth, so it's completely strained.
When ready to serve: Pour 85ml of the batch mix into a cocktail shaker containing ice, and stir gently for a minute to chill. Filter into a cold coupe glass or equivalent, top with a few cranberries and complete it with a light spray with the mandarin essence above the glass.
